We did not modernise chiya. We refused to rush it.

The coals are lit before seven and the matka never leaves them. Milk tea goes in, spice goes in, and it sits until it is ready — not until the queue gets long.
Everything else on the board is built the same way: lassi churned when you order it, pakoda dropped fresh, chatpate tossed in front of you.
The only thing we sped up is ordering. Scan the card on your table and the ticket is in the kitchen before you put your phone down.
